You get 4G across all seven islands and 5G in the main tourist hubs of Tenerife, Gran Canaria, Lanzarote and Fuerteventura. Since the Canaries are legally part of Spain and the EU, you connect on a proper Spanish line rather than a patchwork roaming arrangement.
Vodafone Spain gives full 5G across Tenerife's south-coast belt (Los Cristianos, Playa de las Americas, Costa Adeje), Puerto de la Cruz and Santa Cruz, plus Gran Canaria's Maspalomas, Puerto Rico and Las Palmas. Lanzarote's Timanfaya, Playa Blanca and Costa Teguise run 4G/5G. Be honest with expectations: Gran Canaria's mountain roads to Tejeda drop to 4G, Fuerteventura's inland ranchland briefly hits 3G, and trails on La Palma, La Gomera, El Hierro and La Graciosa get patchier.

This is a data plan, so it doesn't come with a local Canary Islands phone number for traditional calls or SMS. In practice that's rarely a problem: over the data connection you can call and message through apps like WhatsApp, FaceTime or Messenger. Because the eSIM is a separate digital line, your physical home SIM can stay in the phone, so you keep your own number for anything that still needs it.
It depends where you're from. EU home carriers' roam-like-home allowances cover the Canaries, so on an EU mainland plan you likely don't need an eSIM, check first.
